There’s enough work in putting together menus for the entertaining & special occasions coming up for the festive season.  We’ve had our cellar door team put together their favourite wine pairings for every kind of celebration.

Spring Seed Sparkling Wines

Whether you’re planning brunch, after-work drinks or fancy canapes, our Spring Seed sparkling wines are the go.  There are two distinct styles to choose from.

  • ‘Gypsy’ Blanc de Blancs is made from 100% organic chardonnay. Complex with a fine mousse & notes of citrus & green apple. Pair it with fresh oysters & you have the most elegant of celebrations.
  • ‘Wanderer’ Sparkling Red Nothing says Christmas like sparkling red.  Made with organic petit verdot, graciano & splash of shiraz to create a complex base wine.  With a vibrant bright purple colour, it’s ripe with blueberries, plum, black cherry & a hint of violets. Delicious on its own, it also LOVES turkey at Christmas time. Serve well chilled.

Backyard BBQ’s

Our Spring Seed Wine Co range offers vibrant, easy-drinking organic wines that go down easy in the sun while you grill up a storm.

  • ‘Aster’ Pinot Noir. Bright & fresh with raspberry characters & gentle tannins. On a hot day add it your esky or ice bucket & serve it lightly chilled. Have it with BBQ vegetables, charcuterie, or gourmet sausages.
  • ‘Cocksomb’ Cabernet Sauvignon. Medium-bodied with a fresh palate, redcurrants & blackberries with well-rounded tannins & length. Enough presence to go with BBQ but light enough for warm-weather drinking.  Think crunchy lamb chops on the BBQ.
  • ‘Scarlet Runner’ Shiraz. With a bright nose of berry & spice, a structured palate with lots of black fruit, hints of liquorice & anise all supported by fine supple tannins. If you have a steak on the BBQ or ribs in the smoker, you’ll have happy guests.

Seafood Feasts  

If you have seafood on the menu, something white & crisp with good acidity is called for.  Try these wines from our organic Spring Seed Wine Co range.

  • ‘Poppy’ Pinot Grigio. Light & crisp with a silky texture a gentle nose of nashi pear & It is superb served well chilled as an aperitif with seafood sushi or prawns.
  • ‘Forget-me-not’ Semillon Sauv Blanc. Blending two of the most delicate yet brilliantly aromatic varieties, ‘Forget-me-not’ is a classic dry white with delicate citrus characters, floral notes & a hint of a summer meadow. It’s a match made in heaven for soft cheese, classic fish & chips or just a spring afternoon in the garden.
  • Four o’clock’ Chardonnay is totally un-oaked, with loads of peach, nectarine, apple, lime, great complexity & a crisp finish. Delicious with any fish dish, shellfish or even your Christmas lobster.

Battle of Bosworth Picnic Wines

Picnics in the Park

The easiest entertaining is a shared picnic under a tree.  Our three Bosworth Family favourites to cover all your picnic dishes.

  • ‘Poppy’ Pinot Grigio. Light & crisp with a silky texture, a gentle nose of nashi pear & citrus. Pinot Grigio goes down perfectly in the sun without any food in sight, but it is also stunning with mild soft cheeses like double brie or goat’s cheese.
  • ‘Morning Bride’ Rose. Pale pink, dry & crisp with nice acidity. It has a nose of watermelon rind & strawberries. Enjoy with charcuterie, southern French onion tart or pissaladière.
  • Everything you could want in a picnic red.  ‘Puritan’ Shiraz is young, fresh, unoaked & preservative-free. Vibrant & delicious with bright red & dark fruits on the nose, chocolate & blueberries on the palate wrapped up with fine-grained subtle tannins. Chill it for warm weather picnics & enjoy with lamb chops, scotch eggs or cured meats.

Battle of Bosworth Outlier Range of Alternative Wines

Wines with a difference

If you’re heading to a wine lovers party or looking for a gift, our Battle of Bosworth Outliers range will add something new to the wine mix.

  • ‘Dissident’ Field Blend: Our brand new skin contact unfiltered white has citrus, lemongrass, spice & soft tannins. Drink gently chilled with salmon gravlax or shellfish.
  • ‘Expat’ Pinot Noir: A light & bright Pinot colour with light red fruits, a delicious perfume & gentle silky tannins. You can chill this lightly if the weather is warm. Serve with turkey, duck, mushroom dishes or cheeses.
  • ‘Exile’ Touriga Nacional. Touriga is most often seen in Portuguese Ports, but we style it into a mid-weight red with a soft palate, bright fruit, lovely length & persistence. Great with chicken on the grill with a cucumber, fennel & avocado salad.
  • ‘Heretic’, our super blend of ‘alternative’ varieties – Touriga, Mataro, Graciano & Shiraz.  With cherry blossom, dark fruits, a soft, savoury palate& a lovely gravelly grainy structure and length.  Think of a backyard pan of paella or a platter of tapas.
  • ‘Puritan’ Shiraz. Our preservative-free, unoaked Shiraz is pure, unadulterated shiraz flavour.  Vibrant colour & spicy red &  blue fruits leaping out of the glass with a lively medium-bodied structure.  Pair it with your Christmas Ham, we dare you.

Christmas Day Family Feast

Christmas is all about bringing the family together.  We’ve dipped into all the Bosworth Wines ranges for a stunning Christmas Day lunch line-up:

  • Spring Seed ‘Wanderer’ Sparkling Red:  Kick off the day with Spring Seed Wanderer Sparkling Red with canapes while you open the presents.
  • Our Battle of Bosworth Chardonnay is a proper, complex chardonnay with classic stone fruit & nut characters. It will pair beautifully with prawns, lobster & roast chicken.
  • ‘Expat’ Pinot Noir: With bright, light red fruits, a delicious perfume & gentle silky tannins, Expat can pair with everything from duck, turkey, pork or ham.
  • Battle of Bosworth White Boar Shiraz: Our take on the rich Amarone-style wines from Veneto in Italy.  Rich, full flavoured, with layers of dark fruits on the palate, with good acidity to balance the rich, generous fruit. Stunning with roast lamb or beef.
  • Battle of Bosworth Vintage Fortified Cabernet:  Christmas plum pudding calls for a fortified wine.  This Aussie style fortified is reminiscent of the Muscats from northeast Victoria with a wonderfully balanced sweetness on the finish.
